Although we found a lack of information online about the world history and culture of this drink, we suspect that corn milk is not a new invention.

Through our own experiences visiting cafes and pop-up food markets, as well as testing at home, we developed this recipe. Exploring our city, we’ve tried both great and not-so-great corn milks.

Ultimately, we landed on a favorite – the Strawberry Corn Milk at Bopomofo Cafe. The corn taste was prominent, with the milk and strawberry puree serving to uplift and complement the star of the show.

To make the corn concentrate, first boil the corn. Once it’s cooked, allow the corn to cool completely before proceeding.

For added efficiency, you can prepare the corn concentrate 1-2 days in advance of when you plan to serve the Strawberry Corn Milk.

How to Customize Your Strawberry Corn Milk

You can customize your Strawberry Corn Milk in a variety of ways.

We want you to be able to adjust the recipe to your personal preferences – after all, it’s your homemade drink. Here are some suggestions to help you do that:

  • Swap the Sweetener – Instead of using white sugar, you can use your preferred sweetener such as monk fruit, stevia, agave, etc. Adjust the amount to suit your taste preferences.
  • Use Your Milk of Choice – You can use whatever milk you prefer! Whole, soy, or oat milk will create a thicker, creamier Strawberry Corn Milk, while skim or almond milk will result in a thinner drink.

    Keep in mind that the type of milk you choose will slightly alter the overall flavor.
  • Adjust the Ratio – Love corn like the Corn Kid? Or maybe strawberries are more your jam?

    Since this recipe has separate components, you’re free to adjust the ratio of corn concentrate, milk, and strawberry puree when assembling your drink.

How to Store and Keep Your Strawberry Corn Milk Fresh

Store the corn concentrate and strawberry puree separately in airtight containers in the refrigerator.

The corn concentrate will keep for up to 2 days in the fridge.

The strawberry puree can also last for 2 days in the fridge, but its shelf life can be extended to 5 days by adding a small squeeze of lemon juice.

Ingredients

Corn Concentrate

  • 2 whole sweet corn on the cob
  • 1 pinch salt
  • 1 tbsp sugar
  • 2 cups water

Strawberry Puree

  • 8 oz frozen strawberries
  • 1 tbsp sugar optional
  • ½ cup water

Drink Assembly

  • ice
  • milk of choice
  • corn concentrate
  • strawberry puree

Recipe

Make Corn Concentrate

  1. Remove the corn husks. Trim the corn kernels off and break the corn cobs so that they could fit into a saucepan.
  1. Add corn, corn cobs, salt, and sugar to a saucepan. Fill with just enough water to cover the corn, about 2 cups.
  1. Bring to a boil, then cook for 5 minutes.
  1. Turn off the heat and let it cool completely. Remove the corn cobs.
  2. Blend the boiled corn/water mixture.
  1. Strain the blended corn to remove the solids.

Make Strawberry Puree

  1. Blend strawberries with sugar and about 1/2 cup of water until it is smooth and pourable.

Drink Assembly

  1. In a boba glass, fill with ice. Then add 2 parts corn concentrate: 1 part milk. Lastly, add a dollop of strawberry puree on top.

  • Can You Make Strawberry Corn Milk Dairy-Free or Vegan?
    • Yes, feel free to use your favorite milk alternatives like soy milk or oat milk.
  • Can you use canned corn instead of fresh corn?
    • Yes, you can substitute canned sweet corn in this recipe, but keep in mind that fresh sweet corn will always taste better!

      Using fresh corn will result in a more pronounced corn flavor, as the kernels have a higher sugar content when young.

      Additionally, extracting flavor from the cob will further enhance the corn taste.
    • 1 can of sweet corn can substitute for about 1 fresh corn on the cob.
    • Check the ingredients list and omit the salt in the recipe if the canned corn already contains salt.
  • Should I use white or yellow corn?
    • You can use white, yellow, or bi-color sweet corn. Regardless of the color, as long as the corn is labeled as “sweet corn,” they will be similar in flavor.
