Serve Fried Enoki Mushrooms as a quick and easy side dish.

We like to garnish with a sprinkle of chives and dried chili peppers. Our favorite dried chili peppers are the ones you can find at Japanese markets, either in powder form or as dried sliced red chili peppers.

To serve, add the mushrooms to a bowl and have sriracha mayo and fresh lemon on the side.

Whatever you choose to use for the garnish, make sure it adds some extra flavor and spice to your dish.

  • 1 pack enoki mushrooms washed and trimmed
  • neutral oil vegetable, canola, etc.
  • salt to taste

Fried Enoki Mushrooms

  1. Heat about 2 inches of oil to 350° F
  2. Separate the whole enoki mushroom cluster into about 1 inch pieces.
  3. Working in batches, shallow fry the mushrooms for 2-3 min each side until golden. Do not overcrowd the pan.
  4. Lay the fried mushrooms on a drying rack. Let cool 5 min. Season with salt to taste.

Sriracha Mayo

  1. In a small bowl, combine sriracha and kewpie mayo in a 1:1 ratio. Adjust by taste to your preferred heat level.

To Serve

  1. Top fried enoki mushrooms with chives and red chili pepper. (optional)
  2. Serve with sriracha mayo and a slice of lemon.

Tips for Preparing Fried Enoki Mushrooms

To ensure perfect Fried Enoki Mushrooms every time, follow these tips:

  • Make sure the oil is hot before adding the mushrooms. Use a food thermometer to make sure the oil is at 350 degrees Fahrenheit. If you don’t own a food thermometer, you can also check the temperature by dipping a wooden chopstick in the oil and watching for steady bubbles.
  • Allow the fried mushrooms to dry on a drying rack or a paper towel-lined plate. This will help to eliminate moisture and ensure a crispy result.
  • Adjust the spice levels according to your taste. If you like it spicy, add more Sriracha to the mayo. If you prefer a milder flavor, add less.
  • If you want even more crunch, try coating the mushrooms in a mixture of cornstarch and flour before frying. You can also try using tempura batter mix (look for tempura mixes that say “just add water”).
