- 1 pack enoki mushrooms washed and trimmed
- neutral oil vegetable, canola, etc.
- salt to taste

- dried chili peppers
- chives
- 1 slice lemon
Fried Enoki Mushrooms
Heat about 2 inches of oil to 350° F
Separate the whole enoki mushroom cluster into about 1 inch pieces.
Working in batches, shallow fry the mushrooms for 2-3 min each side until golden. Do not overcrowd the pan.
Lay the fried mushrooms on a drying rack. Let cool 5 min. Season with salt to taste.
