For the chicken broth, our goal is to deliver more savory flavor and moisture into the cooked cabbage. We want to avoid using a broth that is overly salty, as the dish will already be seasoned with miso paste.
If you have regular chicken broth on hand, you can dilute it with water before adding it for the braising step.
