How to Cook Miso Braised Cabbage

Start by the cabbage into large wedges, ensuring each piece retains a portion of the stalk. This will help hold the cabbage together during cooking.

Sear the cabbage wedges in a hot pan until one side develops a charred, caramelized finish.

Then, we’ll complete the cooking process by basting the cabbage with a savory miso-butter mixture and braising it in chicken broth.

For an extra kick of flavor, we recommend adding yuzu kosho – a Japanese condiment of fermented yuzu peel and chilis.

The cabbage is cooked to perfection when all parts are tender yet not overly soft or soggy. To check for doneness, insert a skewer into the thickest portion of a cabbage wedge and ensure it slides through easily to the center.

  • ½ green cabbage
  • 2 tbsp unsalted butter, softened
  • 1 tbsp white miso
  • ½ tsp yuzu kosho, optional
  • 1 cup chicken broth, use chicken bone broth, low sodium chicken broth, or ½ tbsp Better Than Bouillion mixed with 1 cup of water

For the chicken broth, our goal is to deliver more savory flavor and moisture into the cooked cabbage. We want to avoid using a broth that is overly salty, as the dish will already be seasoned with miso paste.

If you have regular chicken broth on hand, you can dilute it with water before adding it for the braising step.

Recipe

  1. Take half a cabbage and cut it into 3 wedges, ensuring each piece retains a portion of the stalk.
  1. Heat a pan with oil over high heat. Place the wedges flat side down and sear.
  1. In a small mixing bowl, combine butter, miso, and yuzu kosho (optional.)
  1. Lower the heat, and add the miso butter. Allow it to melt and foam, using your spatula or tongs to move around the cabbage for even coating.
  1. Pour in the chicken broth and bring it to a simmer. Spoon it over the cabbages, making sure to bathe all the layers in the broth.
  1. Braise for about 5-7 minutes until the cabbage is tender. Insert a skewer into the thickest portion of a cabbage wedge to check for doneness.
