Ingredients

  • ½ green cabbage
  • 2 tbsp unsalted butter softened
  • 1 tbsp white miso
  • ½ tsp yuzu kosho optional
  • 1 cup chicken broth use chicken bone broth, low sodium chicken broth, or ½ tbsp Better Than Bouillion mixed with 1 cup of water

Instructions

  • Take half a cabbage and cut it into 3 wedges, ensuring each piece retains a portion of the stalk.
  • Heat a pan with oil over high heat. Place the wedges flat side down and sear.
  • In a small mixing bowl, combine butter, miso, and yuzu kosho (optional.)
  • Lower the heat, and add the miso butter. Allow it to melt and foam, using your spatula or tongs to move around the cabbage for even coating.
  • Pour in the chicken broth and bring it to a simmer. Spoon it over the cabbages, making sure to bathe all the layers in the broth.
  • Braise for about 5-7 minutes until the cabbage is tender. Insert a skewer into the thickest portion of a cabbage wedge to check for doneness.
