Spice Mix
- 2 pieces cassia cinnamon
- 1 orange peel
- 1 piece cardamom
- 4 pieces star anise
- 3 bay leaf
- 2 tbsp Szechuan peppercorn
Beef Soup
- 1½ lbs beef stew beef, shank, brisket, etc.
- ½ tbsp ginger minced
- 1 bunch scallions stalks and leaves separated, save green part for garnish
- 1 garlic peeled
- 1 onion
- 2 tbsp doubanjiang (fermented chili bean paste)
- 1 tbsp tomato paste
- ¼ cup shaoxing wine
- 2 tbsp dark soy sauce
- 1 tbsp soy sauce or light soy sauce
- 1 liter beef bone broth
- ½ lb daikon radish peeled and cut
Noodle Bowl
- knife cut flour noodles or noodle of choice
- green vegetables (bok choy, spinach, etc.) blanched or steamed
- green onion for garnish
Prepare Ingredients
Place the spices in a tea bag(s) or cheesecloth. Make sure it is securely fastened so that the spices do not escape. Set aside.
Bring a pot of water to low boil. Add the beef and blanch for 5 minutes. This will extract the impurities and set up for a clean broth. Discard the used water. Rinse the beef thoroughly and set aside.
In a mixing bowl, combine doubanjiang, tomato paste, shaoxing wine, dark soy sauce, and soy sauce.
Slow Cook
In the slow cooker, add beef, onions, scallion stalks, garlic, and ginger.
Add sauce mix, bone broth, and the spice bag.
Cover with lid and slow cook on low for 6 hours.
For the remaining 2 hours, add daikon radish.
Adjust seasoning with salt and white pepper to taste.
Assemble the Beef Noodle Soup
Cook noodles according to package instructions.
Serve the beef soup with noodles, green vegetables, and chopped green onion.
Alternative Cooking Method: Stovetop (~2 hrs total)
Prepare the ingredients and assemble the beef noodle soup as normal. Follow these stovetop cooking steps instead of the slow cooker steps:
- Heat a large pot with oil. Add ginger, scallions, and garlic. Cook until aromatic.
- Add the sauce mixture and blanched beef. Pan fry until the beef begins to brown, about 5 minutes.
- Add daikon, bone broth, and the spice bag(s).
- Cover and let simmer for 1 hr - 90 min until tender.
