College-Friendly Spaghetti Rice

Spaghetti Rice

  • 2 cups cooked rice
  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • ½ cup onion diced
  • 2 cloves garlic minced
  • 1 jar marinara sauce
  • 2 fresh tomatoes diced
  • choice of veggies like spinach, kale, eggplant, zucchini, carrots, mushrooms
  • ¼ cup parsley chopped
  • salt & pepper to taste

Garnish

  • shredded cheese
  • parsley chopped

Instructions

Make the spaghetti sauce

  • Heat your pan to medium-high. Add garlic and onion. Cook 3 min or until light brown and fragrant.
  • Add ground beef. Cook for 10 min, stirring occasionally.
  • Heat a pot to medium-high. Add marinara sauce, tomatoes, and your choice of veggies.
  • Bring to boil then lower the heat for a low simmer. Cook for 10 minutes, stirring occasionally.
  • Add the cooked ground beef to the sauce pot. Mix well. Add parsley, then add salt & pepper to taste.

Mix with rice

  • Mix the meat sauce with cooked rice. Top your spaghetti rice with shredded cheese and parsley.
