Spaghetti Rice
- 2 cups cooked rice
- 1 tbsp olive oil
- 1 lb ground beef or turkey
- ½ cup onion diced
- 2 cloves garlic minced
- 1 jar marinara sauce
- 2 fresh tomatoes diced
- choice of veggies like spinach, kale, eggplant, zucchini, carrots, mushrooms
- ¼ cup parsley chopped
- salt & pepper to taste
Garnish
- shredded cheese
- parsley chopped
Make the spaghetti sauce
Heat your pan to medium-high. Add garlic and onion. Cook 3 min or until light brown and fragrant.
Add ground beef. Cook for 10 min, stirring occasionally.
Heat a pot to medium-high. Add marinara sauce, tomatoes, and your choice of veggies.
Bring to boil then lower the heat for a low simmer. Cook for 10 minutes, stirring occasionally.
Add the cooked ground beef to the sauce pot. Mix well. Add parsley, then add salt & pepper to taste.
