Equipment

Ingredients

Honey Butter Glaze

  • ½ cup butter (1 stick)
  • 6 tbsp honey
  • 2 tbsp neutral oil
  • 2 tbsp soy sauce

Furikake Chex Mix Fillings

  • 2 cups rice Chex
  • 2 cups wheat Chex
  • 4 cups Honeycomb cereal
  • 4 cups pretzels
  • 2 cups Jagarico Hokkaido Butter Sticks (2x 2oz bags)
  • 1 cup raw peanuts
  • ½ bottle nori komi furikake (1.7 oz bottle, about ¼ cup)

Instructions

  • Preheat oven at 250℉.
  • In a saucepan, combine all the honey butter glaze ingredients. Heat on medium just until the mixture foams up and turns dark golden brown, then take off the heat. Allow to cool for about 10 minutes.
  • In a large mixing bowl, mix together the chex, cereal, pretzels, butter sticks, and peanuts.
  • Add the glaze and stir to coat the mixture evenly.
  • Add the furikake and stir again.
  • Divide the mix in half and spread them evenly in two lined baking sheets. Bake at 250℉ for 1 hour to dehydrate and set the glaze.
  • Remove from the oven and let cool for a few minutes. Use a spatula to gently break up any pieces stuck together. Serve immediately, or allow to cool completely before placing them in an airtight container.

Notes

Below of some of our tips we learned through experience to make the perfect Honey Butter Furikake Chex Mix:
  1. Use a light-colored baking sheet to avoid darkening and burning the honey butter sticks and Chex cereals. Using a dark-grey standard baking sheet led to burnt or super dark pieces that were not appetizing. We used our Our Place Baking Pan with a silicone baking mat, which prevented any burning or overcooking. If all you own is a dark baking sheet, consider adjusting the bake time and monitoring for doneness.
  2. Once you've applied the glaze, work quickly to coat and season the mixture. If it's left out for too long at this point, the mix will get soggy. Get it in the oven to start dehydrating!
  3. When mixing, be careful not to crush the ingredients. Instead, focus on gently tossing them and turning the bowl as you mix to improve efficiency.
