Mung Bean Milk Tea

Indulge in this naturally-flavorful green milk tea, infused with the earthy goodness of mung beans and fragrant notes of pandan. This signature drink was popularized by 7 Leaves Cafe, and our recipe is the perfect choice for a homemade beverage that is not too sweet!

Ingredients

Mung Bean Paste

  • 1 cup split mung beans 200g
  • ½ cup sugar 105g

Pandan Green Tea

  • 2 tbsp green tea (if available, follow product instructions to calculate 2x strength)
  • 3 pandan leaves chopped
  • 2 cups hot water

Mung Bean Milk Tea Base

  • mung bean paste
  • pandan green tea
  • 2 tbsp condensed milk adjust for sweetness
  • 1-2 drops pandan extract

Drink Assembly

  • 1 cup mung bean milk tea base
  • ½ cup milk of choice
  • ice

Instructions

  • Boil the mung beans in a pot of water for about 15-20 minutes until soft and tender. Remove from heat, strain, and let cool.
  • Meanwhile, steep the tea leaves and pandan leaves for 5-7 minutes. Strain and discard the leaves. See Note 1.
  • Blend mung beans and sugar together. You can leave it a bit chunky for added texture, or blend further for a smooth texture. See pictures in the blog post for examples.
  • Make the mung bean milk tea base: combine the mung bean paste, pandan green tea, condensed milk and pandan extract. Use extra condensed milk if you prefer a little sweeter.
  • Cover and chill in the fridge for at least 30 minutes.
  • Assembly: Fill your boba glass with ice, 1 cup mung bean milk tea base, and ½ cup milk of choice. If using a thick creamer as your milk component, consider adjusting to less than ½ cup.

Notes

Note 1. As an additional step, you can blend and then strain the brewed pandan green tea with an extra pandan leaf or two. This will further enhance color and provide a stronger pandan flavor. We have tested this technique ourselves and found that this extra step works well, but is not strictly necessary for crafting a delicious Mung Bean Milk Tea. Consider doing this optional step if you like a more vibrant green color and a slightly more pronounced pandan flavor.
