- 1 whole avocado sliced
- 1 cup arugula
- ½ cup goat cheese
- 5 slices prosciutto
- olive oil for drizzle
- salt & pepper to taste
Lay the prosciutto flat on a clean cooking surface.
To make the roll-ups, add one filling at a time as you roll. (See Note 1.) Start with 4-5 pieces of arugula on the end of the prosciutto. Roll 360 degrees or until the arugula is completely bound by the prosciutto.
Add 1-2 slices of avocado, leaned up against the wrapped arugula. Roll 360 degrees or until the avocado is completely bound by the prosciutto. You should now have arugula and avocado both wrapped (but in their own compartments) by the same prosciutto slice.
Using the same rolling method, add goat cheese and finish the roll.
Repeat until all your prosciutto slices are rolled and filled.
Drizzle the pieces with olive oil. Season with salt and pepper to taste.
- If you want a faster roll-up method, you can simply place all the fillings at once, then roll up the prosciutto. However, adding one filling at a time as you roll will make it keep together much nicer in regards to storing and traveling to your picnic destination.
- Although most of the ingredients have a long shelf life in the fridge, the avocado is the most perishable. Serving the rolls as soon as possible is ideal, but there are ways to keep the avocado fresh. Before assembling the rolls, consider squeezing lemon juice over the avocado slices or brushing them with olive oil. The key is to coat the exposed avocado surfaces with lemon juice or olive oil, which can help the avocado stay fresh for about a day.
