Equipment

Ingredients
Spaghetti Rice
- 2 cups cooked rice
- 1 tbsp olive oil
- 1 lb ground beef or turkey
- ½ cup onion diced
- 2 cloves garlic minced
- 1 jar marinara sauce
- 2 fresh tomatoes diced
- choice of veggies like spinach, kale, eggplant, zucchini, carrots, mushrooms
- ¼ cup parsley chopped
- salt & pepper to taste
Garnish
- shredded cheese

Instructions
Make the spaghetti sauce
- Heat your pan to medium-high. Add garlic and onion. Cook 3 min or until light brown and fragrant.
- Add ground beef. Cook for 10 min, stirring occasionally.
- Heat a pot to medium-high. Add marinara sauce, tomatoes, and your choice of veggies.
- Bring to boil then lower the heat for a low simmer. Cook for 10 minutes, stirring occasionally.
- Add the cooked ground beef to the sauce pot. Mix well. Add parsley, then add salt & pepper to taste.
Mix with rice
- Mix the meat sauce with cooked rice. Top your spaghetti rice with shredded cheese and parsley.
